
I am again in cooking spree experimenting with good food. I have been thinking to try out stuffed tomatoes for a long time and finally I experimented with my version of Raw Stuffed Tomatoes. It was yum but could have been better with a generous usage of cashew cream. There was only few cashews at home so I just had a limited amount of cashew cream.
Raw Stuffed Tomatoes
Tomatoes
Finely Chopped Onion
Grated Coconut
Finely Chopped Raw Mango
Grated Carrot
Finely Chopped Palak
Finely Chopped Coriander Leaves
Toasted Sesame Seeds
Grated Cauliflower
Roasted and Crushed Peanuts
Cashew Cream (Soak Cashews. Make a paste of soaked cashew with garlic and salt with a creamy consistency)
Salt and Pepper
Scoop the tomatoes. You can use the pulp in tomato juice or tomato soup later. Mix grated coconut, finely chopped onion, finely chopped raw mango, grated carrot, finely chopped palak, coriander leaves, toasted sesame seeds, grated cauliflower, roasted and crushed peanuts. Mix them all. Mix Cashew Cream too. Add salt and pepper as per taste. I did not use salt except for the cashew cream as I loved the taste as it was. Stuff the tomatoes with this prepared filling and drop a little bit of cashew cream on top if you like.
