The other day I had gone to the sweet shop to buy sweets on the eve of Rakshabandhan for my brother. I was tempted on seeing Nariyal Barfi, one of my favourite. Though I am not a sweet tooth person but since the day I was diagnosed with Type 1 diabetes and was advised by the allopathy doctor to not have sweet I feel like having more of sweets.
As I have learned and explored more about natural food, I can make a healthier choice. We though of trying out the coconut barfi with jaggery. Jaggery also is not too healthy as it is also processed but better than sugar. Next time I would try with dates.
We started initially with the though of making barfi but then we found it easier to make as Ladoos :).
Coconut Ladoo with Jaggery
1 coconut (grated)
jaggery (according to the sweetness desired)
Grate the coconut. In a pan add coconut and jaggery. Keep roasting it. The jaggery will melt because of the heat. Once it is roasted properly, add crushed cardamom and mix. Cool it down and form small balls. It tastes yum when hot. You can also refrigerate it to make it little hard.
Soon I will try to make it healthier with dates. 🙂
